Banana Chocolate Bread

Very often we buy more bananas than we can eat. We do not realize that in few days our bananas will be overripe, we don’t want to eat them anymore and they end up in the trash. Don’t throw them away !!!

This is a great recipe. It is a very tasty and delicious bread that we all want to enjoy in a brunch, at breakfast and even the kids at school.

You can freeze it without any problem and so you can always have a bite of sweet when you need it.


INGREDIENTS:

  • 4 very ripe bananas
  • 200 gr. (1 cup) sugar
  • 2 teaspoons vanilla sugar or 1 teaspoon vanilla extract
  • 200 gr. (3/4 cup) melted butter at room temperature
  • 2 whole large eggs
  • 300 gr. (2 cups) of all-purpose flour
  • 1½ teaspoons baking powder
  • ½ teaspoon salt
  • 100 gr. (1/2 cup) finely chopped chocolate at least 55%

Banana Chocolate Bread


DIRECTIONS:

Preheat oven to 180ºC / 350ºF.

Lightly grease a 24 cm. x 11 cm. rectangular pan and set aside.

Mash the bananas with a fork and set aside.

Chop the chocolate finely and set aside.

Melt the butter in the microwave and let it cool.

In a large bowl, combine and sift the flour, baking powder and salt. Set aside.

In another large bowl and with an electric mixer, whip for 3-4 minutes the half of the mashed bananas with sugar and vanilla until the sugar is completely dissolved and the batter becomes a fluffy banana cream.

Add the eggs and the melted butter and continue beating until you get a bright, homogeneous batter.

Mix in the dry ingredients just until incorporated. You should not beat much, just until blended.

At the end and with the help of a rubber spatula, fold in the remaining mashed banana and the chopped chocolate.

Pour the batter into the prepared pan and give the pan a tap against the kitchen counter to avoid any air bubbles in the mixture.

Bake for about 60 minutes or until a toothpick inserted comes out clean.

Take the bread from the oven, wait about 10 minutes before unmolding.

We know that it is very difficult, but you have to. You will be rewarded. Unmold and cool thoroughly before slicing.
